How to turn off/on bedtime reminders and sleep notifications:

Step1: Open the Health app.

Step2: Tap Browse at the bottom right, then tap Sleep.

Step3: Scroll down to Your Schedule, then tap Full Schedule & Options.

Step4: Tap Options.
